Yes, it sounds as if it needed to heat again to get to the hard ball stage. Did you check it by dropping a small bit in a cup of cold water to see if it was brittle?

I thought all was well but…it seems to be a caramel now instead of toffee…Maybe I should have cooked it again after adding the water…?

I added 2 T. hot water, 1 T. at a time, stirred quickly, and it pulled itself together! Thank you!

I’ve made toffee for years, using a “7 minute” recipe, but for some reason I’ve had problems with all 3 batches this year.
